In large mixing bowl combine:
2 cups warm water
3/4 cups sugar
2 pkg. dry yeast
1/4 cup quick oatmeal
Let sit about 5-7 minutes
Add to yeast mixture:
2 eggs
1/4 cup oil
1 TB salt
1 1/2 cup flour
Add 4 1/2 - 5 1/2 more cups of flour and stir until flour is well combined. Turn out on floured board and knead until smooth (8-10 minutes). Place ball of dough in greased bowl, turning once to grease top of dough. Cover with cloth towel and place bowl in preheated oven. Let rise 1 hour
Punch down dough. Divide into 3 equal parts. Roll each section to form 1 loaf. Place in greased loaf pans. Cover and let rise 1 more hour
Remove from oven and preheat oven to 350 degrees.
Back at 350 for 20 minutes. You may want to check at about 18 minutes if oven runs hot. Bread is done when it sounds hollow when thumped on top.
Cool on wire racks
Freezes well when cooled
Make cinnamon rolls by spreading rolled out rectangle of dough with butter, cinnamon and sugar. Roll up on long side and cut into 1" slices. Let rise in greased square pan.
