Lime peanut ginger chicken

I found this one in one of my mom's cookbooks once, and convinced her to make it
8 chicken breast halves
1/2 c fresh lime juice
1 clove garlic
1 tb sliced ginger root
1 ts whole peppercorns
1 ts dried basil
1 tb soy sauce
1 tb white vinegar
1 ts honey
1 tb water
1 tb grated lemon peel
2 tb olive oil
1 tb sesame oil
3 tb olive oil
2 tb peanut butter
2-3 c sliced mushrooms
1 tb cornstarch, diluted
1/2 c sliced green onions

Cut chicken into bite-size pieces and marinate in lime juice for at least 2 hours in the fridge. Make a dressing by chopping garlic, ginger & peppercorns. Blend in basil, soy sauce, vinegar, honey, water and grated lemon peel. Pour that mixture into blender and process with 2 tb olive oil.

Saute chicken in sesame oil & 3 tb olive oil. Add dressing & stir. Mix in peanut butter and mushrooms. Add cornstarch mixture and stir. Sprinkle green onions on top and serve over rice.
